8 Easy Sheet-Pan Dinners
Chop, toss with oil and seasoning, roast, eat. One pan means one thing to wash. Line the pan with parchment and there's almost nothing to scrub.
Chicken
- Lemon chicken thighs and potatoes. Roast halved baby potatoes at 425°F (220°C) for 15 minutes, then add boneless thighs with lemon, garlic, and oregano and roast 20–25 minutes more, until the chicken reaches 165°F (74°C).
- Fajita chicken and peppers. Toss sliced chicken breast, peppers, and onion with chili powder, cumin, and lime. Roast at 425°F for 18–20 minutes. Serve in warm tortillas.
- Honey-garlic chicken and broccoli. Roast bite-size chicken at 425°F for 10 minutes, add broccoli, brush with honey, soy sauce, and garlic, and roast 10 minutes more.
Meat-free
- Crispy chickpeas and sweet potato. Toss cubed sweet potato and a drained, dried can of chickpeas with smoked paprika. Roast at 425°F for 25–30 minutes, shaking once. Drizzle with yogurt or tahini.
- Sheet-pan nachos. Spread tortilla chips, beans, cheese, and corn on the pan and bake at 400°F (200°C) for 8–10 minutes. Top with salsa, avocado, and green onion.
- Roasted vegetable pasta. Roast zucchini, cherry tomatoes, onion, and peppers at 425°F for 20 minutes until jammy, then toss with cooked pasta, olive oil, and cheese.
Fast fish and sausage
- Salmon and green beans. Roast green beans at 425°F for 5 minutes, add salmon fillets with lemon and dill, and roast 10–12 minutes until the fish flakes, or 145°F (63°C) inside.
- Sausage, apples, and onions. Roast precooked sausage, apple wedges, and red onion with a little mustard and thyme at 425°F for 15–20 minutes.
Make everything finish at once
Cut slow items like potatoes and carrots small, or give them a head start. Don't crowd the pan: space means browning, crowding means steaming. Use a meat thermometer. The USDA safe temperatures are 165°F for chicken, 160°F for ground meat, and 145°F for fish.
